Treat Yo Self Paleo Fudge


Treat Yo Self Thursday back with one of my favorite paleo treats.

Fudge.

This is yummy as all get out.

Being on a candida diet in my twenties led me to experiment with many things. 

This first of which was a chocolate bark -- which was made with Stevia.  I now try to avoid all things Stevia related as studies have shown it leads to infertility in women.  Gee, if only I had known.

The chocolate making process of combining cocoa powder with coconut oil has firmly been ingrained in my soul for years.  

For this fudge, I was wanting something salty and sweet that reminded me of these amazing sea salt chocolate covered 'crack' almonds so this is what I ended up creating.

Fair warning, you will want to eat them all.

Paleo Fudge

Dairy Free, Gluten Free, Paleo, Refined Sugar-Free

Supplies:
Whisk
Medium Sauce Pan
Silicone Mold or 9x9 Pyrex Lined with Parchment

-- I love my silicone mold, I use it for generally all the paleo treats I bake and I really suggest investing in one.


Prep Time
5 minutes active prep
2 hours of cooling in the fridge

Servings
24 squares

Ingredients:
1 cup melted coconut oil
1 cup cocoa or cacao powder
1 cup smooth almond butter (or nut butter of choice)
1/2 cup maple syrup or honey
1/4  teaspoon of sea salt
1/2 teaspoon of vanilla

Instructions:
In the saucepan, combine all ingredients.

Heat over low--medium heat and whisk until smooth. Do not bring to a boil or simmer.  Just whisk until oil is melted completely and all ingredients combined.

As soon as it's smooth, pour into silicone molds. Place in fridge and let sit for at least 2 hours.

Store in an airtight container in the fridge or freeze to enjoy later. Now you just have to wait to eat. Bummer. Go watch a movie or do what #leohusband did...lick the whisk.
