Soft Boiled Eggs


When I’m tired or I have a long week ahead of me, I always turn to soft boiled eggs.

It’s so simple to grab my smallest saucepan, fill it with water, and set it on the stove. Turn the burner on high and get an ice bath ready while the water comes to a boil.

In next to no time the water is at a rolling boil and I’m slipping the eggs in, setting a timer for 6 minutes, and relaxing on the couch while my breakfast cooks.

When the timer is done, I scoop the eggs off with a slotted spoon into the ice bath and then begin peeling the shells off the eggs.
Sometimes I pair it with leftover meat from the night before or today I had it with one of my sweet potato muffins.
